Add a little sweetness to your morning or any time of the day with our Strawberry Coffee Cake. Tastes great with coffee or a big glass of milk. YUM!

Ingredients

  • ½ cup WEM Organic Whole White Wheat Flour
  • ½ cup of brown rice flour
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 egg
  • 2 Tbsp melted butter
  • 1 1/2 cups strawberries, sliced

Crumb Topping:

Instructions

  1. Preheat oven to 375 degrees.
  2. Sift together the flour, sugar, baking powder, and salt.
  3. Add milk, egg, and butter and beat together.
  4. Spoon batter into a greased and floured 8-inch square baking pan.
  5. Top with sliced strawberries.

Topping:

  1. Combine 1/2 cup flour and 1/2 cup sugar.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Add chopped pecans or walnuts. Sprinkle crumb topping over the strawberries.
  4. Bake for 30 to 35 minutes.
