You can’t go wrong with Peanut Butter Cookies! Here’s a healthier version that uses hearty Organic Buckwheat Flour. Yum!



  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl beat butter and peanut butter.
  3. Add the sugars, baking soda, and baking powder. Beat until combined.
  4. Mix in egg and vanilla. Add flour.
  5. Cover and chill dough about 1 hour or until easy to handle.
  6. Shape dough into 1-inch balls.
  7. Roll balls in additional sugar to coat.
  8. Place balls 2 inches apart on an ungreased cookie sheet.
  9. Using the tines of a fork, flatten balls by making crisscross marks on top.
  10. Bake for 7 to 9 minutes or until bottoms are light brown.
  11. Makes about 36 cookies.
