Yield: 1 9 X 5 inch loaf

  1. Coat a 9 X 5-inch loaf pan with cooking spray.
  2. Grate orange peel. (zest)
  3. Cut cranberries in half. Put in a small bowl.
  4. Add orange juice and sugar or honey and let soak a few minutes.
  5. In a large bowl, stir together flour, salt baking soda, baking powder, orange peel, and nuts.
  6. Beat egg and stir egg and oil into cranberry mixture.
  7. Add wet ingredients to dry and stir until blended.
  8. Fold into loaf pan.
  9. Bake for 50 minutes.
  10. Remove from loaf pan and cool on wire rack.
