Yield: 1 - 9 X 5 inch loaf

  1. In a small bowl, pour hot water over oats. Let sit while mixing the rest of the ingredients.
  2. Preheat oven to 350 degrees.
  3. Coat a 9 X 5-inch loaf pan with cooking spray.
  4. In a large bowl, stir together dry ingredients.
  5. Add egg, honey, oil, and vanilla into soaked oatmeal.
  6. Stir wet ingredients into dry, mixing well.
  7. Turn into loaf pan.
  8. Bake 45-50 minutes.
