This rice flour and soy flour combination makes a very delicate, light muffin.

Ingredients

  • 1 cup of rice flour
  • 1/2 cup soy flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons sugar, honey or Splenda No Calorie Sweetener
  • 1 cup buttermilk
  • 2 tablespoons canola oil

Instructions

  1. Preheat oven to 400°F.
  2. Coat 9 cups of a 12 cup muffin pan with cooking spray.*
  3. In medium bowl, combine dry ingredients.
  4. Stir in egg, buttermilk and oil, stirring just until moistened.
  5. Spoon into muffin pan.
  6. Bake 15-20 minutes or until golden brown.
  7. *Fill last 3 cups with water after spooning batter into 9 coated cups.
