Delicious and fruity muffins.
Ingredients
- ¾ cup WEM Organic Unbleached All-Purpose Flour
- ½ cup WEM Organic Whole Wheat Flour
- ½ cup WEM Organic Yellow Cornmeal
- 3 tsp baking powder
- 1/2 cup sugar
- ½ cup of vegetable oil
- 2 eggs
- ½ cup milk
- ½ cup kiwifruit, peeled and chopped
Instructions
Baking Time: 15-20 minutes
- Preheat oven to 400 degrees.
- Line muffin tins with paper liners.
- In a medium bowl, whisk together all dry ingredients until combined. Set aside.
- In a large bowl, beat together oil, eggs, and milk. Stir in kiwifruit by hand.
- Add dry ingredients to kiwifruit mixture, stirring by hand until just combined.
- Spoon into muffin tins, filling ¾ full.
- Bake 15 to 20 minutes until done.
