Ingredients

  • 8 ounces cream cheese, softened (low-fat is fine)
  • 2 cups WEM Biscuit Mix
  • 1 1/2 cups milk
  • 1/4 cup vegetable oil
  • 2 tablespoons sugar
  • 1 egg
  • 1/2 cup green onions, finely chopped

Hands-on Time: 7 minutes
Baking Time: 15-20 minutes
Total Time: 25 minutes
Yield: 12 muffins

  1. Preheat oven to 400 degrees
  2. Coat 12 cup muffin pan with cooking spray
  3. In mixing bowl, whisk cream cheese until creamy smooth.
  4. Add biscuit mix, milk, oil, sugar, and egg, blending until smooth.
  5. Stir in green onions.
  6. Spoon batter into muffin pan.
  7. Bake 15-20 minutes.
  8. Remove muffins from pan to cool.
