Ingredients

  • 1 cup WEM Organic Whole Wheat Flour
  • 1/2 cup wheat bran
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons brown sugar
  • 1/2 cup raisins
  • 1 cup unsweetened applesauce
  • 1/2 cup (2 small) mashed ripe bananas
  • 2 egg whites, slightly beaten
  • 1/2 cup skim milk

Instructions

Hands-on Time: 10 minutes
Baking Time: 15 minutes
Total Time: 25 minutes
Yield: 12 muffins

  1. Preheat oven to 375 degrees.
  2. Coat 12 cup muffin pan with cooking spray
  3. In a medium-size bowl, mix together dry ingredients.
  4. Stir in raisins.
  5. In a small bowl, mash a banana and stir together with wet ingredients.
  6. Add wet to dry ingredients.
  7. Stir just until moistened. Do not over mix batter!
  8. Spoon into muffin pans.
  9. Bake about 20 minutes.
  10. Cool in pan on a rack before removing
