Ingredients
- 1 cup WEM Organic Whole Wheat Flour
- 1/2 cup wheat bran
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons brown sugar
- 1/2 cup raisins
- 1 cup unsweetened applesauce
- 1/2 cup (2 small) mashed ripe bananas
- 2 egg whites, slightly beaten
- 1/2 cup skim milk

Hands-on Time: 10 minutes
Baking Time: 15 minutes
Total Time: 25 minutes
Yield: 12 muffins
- Preheat oven to 375 degrees.
- Coat 12 cup muffin pan with cooking spray
- In a medium-size bowl, mix together dry ingredients.
- Stir in raisins.
- In a small bowl, mash a banana and stir together with wet ingredients.
- Add wet to dry ingredients.
- Stir just until moistened. Do not over mix batter!
- Spoon into muffin pans.
- Bake about 20 minutes.
- Cool in pan on a rack before removing
