Ingredients

  • 6 boiled eggs
  • 3 1/2 lbs Yukon potatoes
  • 1/4 cup sweet relish
  • 1 cup mayonnaise
  • 3 tbsp yellow mustard
  • 1/2 cup War Eagle Mill Chow Chow Relish
  • 1 tbsp fresh ground black pepper
  • 1 tbsp kosher salt
  • 1 tbsp paprika for garnishing
  • 1/4 cup chopped parsley for garnishing 

Instructions

  1. Chop potatoes into chunks and place in a medium saucepan
  2. Cover with cold water and kosher salt
  3. In a medium bowl, combine mayonnaise and mustard
  4. Add potatoes, chopped eggs, chow chow, and pickle relish
  5. Toss to combine
  6. Garnish with paprika and chopped parsley
  7. Chill and serve
