Ingredients
- 1 cup chopped dried apricots
- 1 cup chopped fresh or dried apple
- 1 cup of water
- 1-1/2 cups WEM Organic Whole Wheat Flour
- 1 cup WEM Organic Unbleached All-Purpose Flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1/2 cup butter or healthy margarine
- 3/4 cup honey
- 1 egg, beaten
- 1 tablespoon lemon juice
Instructions
Hands-on Time: 15 minutes
Baking Time: 35-40 minutes
Total Time: 45 minutes
Yield: 24-2" squares
- Simmer apricots and apples in water, covered, 10 minutes, or until water is absorbed. Let cool.
- Cream together butter, honey, and egg.
- Mix together dry ingredients and add to egg mixture.
- Stir in fruits and nuts.
- Preheat oven to 325°F.
- Coat a 9 X 12 X 2-inch baking pan with cooking spray.
- Pour batter into pan.
- Bake 35-40 minutes.
- Cool and cut into squares.
