Ingredients

  • 1 cup chopped dried apricots
  • 1 cup chopped fresh or dried apple
  • 1 cup of water
  • 1-1/2 cups WEM Organic Whole Wheat Flour
  • 1 cup WEM Organic Unbleached All-Purpose Flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup butter or healthy margarine
  • 3/4 cup honey
  • 1 egg, beaten
  • 1 tablespoon lemon juice

 

Instructions

Hands-on Time: 15 minutes
Baking Time: 35-40 minutes
Total Time: 45 minutes
Yield: 24-2" squares

  1. Simmer apricots and apples in water, covered, 10 minutes, or until water is absorbed. Let cool.
  2. Cream together butter, honey, and egg.
  3. Mix together dry ingredients and add to egg mixture.
  4. Stir in fruits and nuts.
  5. Preheat oven to 325°F.
  6. Coat a 9 X 12 X 2-inch baking pan with cooking spray.
  7. Pour batter into pan.
  8. Bake 35-40 minutes.
  9. Cool and cut into squares.
