Toasted Pecan Ginger Muffins

A spicy, nutty, tasty muffin!

Ingredients

  • 1 cup WEM Whole Wheat Flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1 cup pecans, chopped
  • 1 cup buttermilk
  • 1/4 cup honey or sugar
  • 1 egg
  • 4 tablespoons melted butter or vegetable oil

Instructions

  1. Chop pecans and spread on a baking sheet.
  2. Toast in a 300 degree oven for 10 minutes.
  3. When pecans are toasted, remove from oven and increase temperature to 400 degrees.
  4. Coat a 12 cup muffin pan with cooking spray.
  5. In medium bowl, stir together the dry ingredients including pecans.
  6. In a small bowl, beat egg and stir in the honey, butter, and buttermilk.
  7. Add egg mixture into dry ingredients stirring just until moistened.
  8. Spoon batter into muffin pan.
  9. Bake 18-20 minutes.
