Sweet Heart Cake

This cake offers all of the rich flavor of chocolate, but with the added nutrition of two wholegrain flours.

Ingredients

  • 3/4 cup WEM Organic White Wheat Flour
  • 1/2 cup WEM Oat Flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 ounces unsweetened chocolate
  • 1/4 cup butter, softened at room temperature
  • 1-1/4 cups brown sugar, lightly packed
  • 2 eggs
  • 1-1/2 teaspoons vanilla
  • 1/2 cup sour cream
  • 1/2 cup boiling water

Instructions

  1. Preheat oven to 375°F.
  2. Grease and flour a 9 inch cake pan (round or square)
  3. Sift together flours, baking soda and salt. Set aside.
  4. Melt chocolate and allow to cool slightly, but not harden.
  5. Beat butter and sugar together with a mixer for two minutes.
  6. Add eggs to sugar mixture and beat for an additional two minutes.
  7. Beat in vanilla and cooled chocolate.
  8. Gradually stir in flour mixture and sour cream, alternating between the two.
  9. Stir in the boiling water.
  10. Pour into prepared pan.
  11. Bake for 20-23 minutes. Do not over bake or cake will be too dry. Allow cake to cook in pan on wire rack for 10 minutes.
  12. Serve plain or top with whipped cream and cherries.
