Super Berry Coffee Cake with Granola

Ingredients

  • 1/3 cup brown sugar, firmly packed
  • 1/2 cup buttermilk
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup WEM Spelt Flour
  • 1/2 tsp baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup berries, fresh or frozen (thawed)
  • 1/4 cup WEM Supernatural Granola

Instructions

  1. Preheat oven to 350°F. Spray an 8 or 9 inch round cake pan with cooking spray.
  2. In large bowl mix sugar, buttermilk, oil, vanilla and egg until smooth.
  3. Whisk together flour, baking soda, cinnamon and salt in a small bowl.
  4. Stir into batter until just moistened. Fold in 1/2 cup of the berries and spoon into pan.
  5. Top with remaining berries and granola.
  6. bake for 25-30 minutes or until golden brown and top springs back when touched in center.
  7. Remove from oven and cool in pan on rack for 10 minutes. Best served warm.
