Ingredients

  • 2 cups WEM Biscuit Mix
  • 2 large eggs
  • 1-1/4 cups milk
  • 1/2 cup pumpkin puree
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Whisk together all ingredients until well combined. Do not over mix. Let batter rest for a few minutes.
  2. Heat griddle or skillet over medium high heat.
  3. Spray the griddle lightly with cooking spray and ladle batter onto the griddle.
  4. Cook until edges start to set and bubbles begin to form on the surface. Flip and cook another 1-3 minutes until pancakes are golden brown.
  5. Serve hot with your favorite toppings.

Try adding mini chocolate chips, chopped nuts or your own spice combinations for a little extra zip.
