Mexican Cornbread

A very attractive and tasty "company" cornbread!

Ingredients

Here’s what you will need:

  • 1 cup WEM Yellow Cornmeal
  • 1 cup WEM All Purpose Flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 tablespoons sugar
  • 1 cup buttermilk
  • 2 eggs
  • 1 small jar pimentos
  • 1 (17 oz) can whole kernal corn, drained
  • 1/2 cup chopped onions
  • 1 4 oz can green chiles
  • 1 cup grated cheese
  • 2 tablespoons butter or vegetable oil

Instructions

  1. Place a 10-inch cast iron (or oven proof) skillet or 11X13 inch baking pan in oven while preheating to 350 degrees.
  2. In a large bowl, combine dry ingredients.
  3. Chop onions.
  4. Combine wet ingredients and vegetables in another bowl reserving cheese and butter for last step.
  5. Add wet ingredients to dry ingredients and mix well.
  6. Fold in cheese.
  7. When oven is preheated and skillet is hot, remove from oven and coat with the 2 tablespoons butter or oil
  8. Pour in batter.
  9. Bake for 45-50 minutes
