Fresh Apple Cake

Ingredients

  • 2/3 cup sugar
  • 2 tablespoons butter or vegetable oil
  • 2 cups sifted WEM Whole Wheat Flour or 1/2 Whole Wheat and 1/2 WEM All-Purpose Flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1/4 teaspoon allspice
  • 1/2 teaspoon cinnamon
  • 2 eggs, beaten
  • 1 1/2 cups buttermilk
  • 4 cups peeled and chopped cooking apples (Jonathon, Granny Smith, Rome or your favorite
  • 1/2 cup chopped nuts

Instructions

  1. Preheat oven to 350 degrees.
  2. Coat a 11 X 13 inch baking pan with cooking spray and dust with flour.
  3. Prepare apples.
  4. Cream butter or oil and sugar by hand with a whisk or with electric mixer until light and fluffy.
  5. Beat in eggs and buttermilk.
  6. Add flour, salt and spices.
  7. Fold in apples and nuts.
  8. Pour batter into prepared pan.
  9. Bake 30-35 minutes.

Recipe Tips and Tricks

Serve as a dessert with a dollop of whipped cream or vanilla ice cream or for a snack with a glass of cold milk.
