Cracked Wheat Flax Soy Bread

Multi grain, dense and delicious!

Ingredients

  • 2 1/2 cups WEM White Whole Wheat Flour
  • 1/2 cup WEM Cracked Wheat
  • 1/2 cup WEM Soy Flour
  • 1/4 cup WEM Flax Meal
  • 1/4 cup WEM Thick Rolled Oats
  • 1 package active dry yeast
  • 1 teaspoon salt
  • 1 1/2 cups warm milk
  • 1 tablespoon vegetable oil

Topping

  • 2 tablespoons WEM Flax Seed
  • 1 tablespoon WEM Thick Rolled Oats
  • 1 egg white
  • 1 tablespoon water

Instructions

  1. In large bowl, stir together whole wheat flour, cracked wheat, soy flour, flax meal, oats, yeast and salt.
  2. Stir in milk and oil.
  3. Turn out on floured board and knead until smooth,7-10 minutes.
  4. Place in a clean, oiled bowl turning once to coat.
  5. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 1/2 hours.
  6. Coat a 9 X 5 inch loaf pan with cooking spray.
  7. Shape dough into loaf and place in pan.
  8. Mix together egg white and water and brush over top of loaf.
  9. Mix flax seeds and oats and sprinkle over egg wash.
  10. Cover and let rise in a warm place for 40-60 minutes
  11. Preheat oven to 375 degrees.
  12. Bake 35 minutes until crust is golden.
  13. Remove from pan and cool on rack.
