Cornmeal Cookies

This is a very old American cookie recipe with a delicate spice flavor and a cornmeal crunch.

Ingredients

  • 1/2 cup skim milk
  • 4 tablespoons butter or margarine, melted
  • 1 egg or 1/4 cup egg substitute
  • 1/2 cup sugar
  • 3/4 cup WEM Yellow, Blue or White Cornmeal
  • 1 cup WEM All-Purpose Flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 400 degrees.
  2. Lightly coat a baking sheet with cooking spray.
  3. In small bowl, cream together milk, butter, eggs and sugar.
  4. In medium size bowl, stir together the dry ingredients.
  5. Stir milk mixture into dry ingredients.
  6. Fold in raisins.
  7. Drop dough by teaspoonfuls onto baking sheet.
  8. Bake 8-10 minutes until edges are golden brown.
  9. Cool on rack and store in airtight container.

Recipe Tips and Tricks

Substitute golden raisins, dried cranberries or cherries for raisins.
