Cinnamon Breakfast Cornbread

A county fair winner and a country style breakfast treat!

Ingredients

Here’s what you will need:

  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 2 cups WEM Cornbread Mix
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 1/2 cups buttermilk

Instructions

  1. Preheat oven to 450 degrees.
  2. Combine sugar and cinnamon.
  3. Spray a 9 X 11-inch baking pan with cooking spray.
  4. Using 1/2 of cinnamon sugar mixture, sprinkle onto pan bottom and sides until well coated.
  5. In medium size mixing bowl, combine Cornbread Mix and baking soda.
  6. Make a well in dry mixture.
  7. Stir in eggs, oil and buttermilk and mix well.
  8. Pour batter into coated pan.
  9. Top with remaining cinnamon and sugar.
  10. Bake for 20-25 minutes.
  11. Slice into wedges. Split pieces and spread with butter.
