Cappuccino Mini Cupcakes

Delightful mini morsels with a wonderful aroma and taste!

Ingredients

  • 1-1/2 cups WEM Biscuit Mix
  • 1/2 teaspoon cinnamon
  • 1 cup packed brown sugar
  • 1/2 cup chopped raisins
  • 1/4 cup chopped nuts
  • 1 egg
  • 1/2 cup water
  • 2 tablespoons instant coffee granules
  • 2 tablespoons vegetable oil
  • 1/4 cup chocolate chips

Optional Chocolate Glaze

Mix together 1/2 cup powdered sugar, 1/4 teaspoon vanilla, the 1 tablespoon milk and 2 tablespoons unsweetened cocoa.

Instructions

  1. Preheat oven to 350°F.
  2. Coat a mini muffin pan with cooking spray or paper cupcake liners.
  3. Stir all ingredients together except chocolate chips.
  4. Spoon into muffin pan.
  5. Place 2 chocolate chips on each muffin.
  6. Bake 12 minutes.
  7. Cool and remove from pan.
  8. Drizzle glaze onto muffins.

Recipe Tips and Tricks

Use regular or flavored brewed coffee in place of the water for a more intense flavor. Try snickerdoodle or hazelnut gourmet coffees!
