Blueberry Flaxseed Muffins

Ingredients

Here’s what you will need:

  • 1 cup WEM Organic White Whole Wheat Flour
  • 1/2 cup WEM Organic All Purpose Flour
  • 3 tablespoons WEM Organic Flaxseed , ground in blender or 4 tablespoons WEM Flaxmeal
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup blueberries, fresh or frozen, tossed with 1 tablespoon flour and 1 tablespoon sugar
  • 1 1/2 cups buttermilk
  • 1 egg
  • 2 tablespoons vegetable oil

Topping

  • 1 egg white, beaten
  • 1 tablespoon sugar
  • 1 tablespoon whole flaxseed

Instructions

  1. Preheat oven to 400 degrees.
  2. Coat a 12 cup muffin pan with cooking spray.
  3. Grind 3 tablespoons flaxseed.
  4. Beat egg white for topping. Add sugar and 1 tablespoon whole flaxseed. Set aside.
  5. Toss blueberries with flour and 1 tablespoon sugar. Set aside.
  6. In medium size bowl, stir together dry ingredients including flaxseed meal.
  7. In small bowl, mix liquid ingredients.
  8. Fold liquid into dry, stirring just until moistened.
  9. Gently fold in blueberry mixture.
  10. Spoon into muffin cups.
  11. Spoon topping on muffin tops.
  12. Bake for about 15 minutes or until golden.
