Apple Apricot Squares

Quick and easy and chock full of goodness!

Ingredients

  • 1 cup chopped dried apricots
  • 1 cup chopped fresh or dried apple
  • 1 cup water
  • 1-1/2 cups WEM Whole Wheat Flour
  • 1 cup WEM All-Purpose Flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup butter or healthy margarine
  • 3/4 cup honey
  • 1 egg, beaten
  • 1 tablespoon lemon juice

Instructions

  1. Simmer apricots and apples in water, covered, 10 minutes or until water is absorbed. Let cool.
  2. Cream together butter, honey and egg.
  3. Mix together dry ingredients and add to egg mixture.
  4. Stir in fruits and nuts.
  5. Preheat oven to 325°F.
  6. Coat a 9 X 12 X 2 inch baking pan with cooking spray.
  7. Pour batter into pan.
  8. Bake 35-40 minutes.
  9. Cool and cut into squares.
