War Eagle Mill Recipes

COFFEE AND CREAM WAFFLES
For a sweetheart morning, this rich waffle is packed with
the wonderful flavor of coffee and cream, yet is totally
whole grain using the War Eagle Mill White Wheat Wholegrain
Flour! If you want to add even more pizzazz, stir in a
couple of teaspoonfuls of instant espresso.
1 cup strong brewed coffee
1 Tbs raw sugar
1/2 tsp salt
1 cp half and half cream
3 eggs, separated
2 cps white whole grain wheat flour
1 1/2 tsp baking soda
Pinch of ground cinnamon
2 Tbs butter, melted

Heat waffle iron on medium heat.
In a large bowl, whisk together the
coffee, sugar, cream, and egg yolks.
Sift in the flour, baking soda, salt,
and cinnamon. Whisk until smooth.
In a separate bowl, beat the egg whites
until stiff; fold into the batter. Coat
waffle iron with nonstick cooking spray.
Pour 1/2 to 2/3 cup batter into iron
(depending on size of waffle iron). Bake
until golden brown.
Makes about 6 - 7 large waffles. Serves
