The bright yellow of the sturdy little crocuses peaking their heads up, checking
the temperature in Arkansas, brought to mind our War Eagle Mill coarse ground
yellow grits. Our grits have substantial holding power just like the little
flowers. Made from organically grown coarse ground yellow corn, they are much
more flavorful than instant grits. Instant grits are formed from the heart of
the corn only, as War Eagle Grits are the whole corn ground, with the chaff and
some small bits of corn flour sifted from the product. Because of the milling
process which is stone buhr, the grain is never heated, therefore, all the
vitamins and minerals are in-tact. The flint granite mill stones turn at a slow
rate of speed versus modern roller or steel mills of today that turn at a very
high r.p.m. We use no additives or preservatives nor do we separate the
flavorful natural corn oil from our grits or cornmeals.

WAR EAGLE YANKEE CORN GRITS
Now, why do we call our grits Yankee? Because the typical corn to make
grits is white corn and white corn is associated with the south. Grits are a
staple dish in the Southern home and in all Southern restaurants are served for
breakfast as a side dish. Throughout the 1900’s, the most desired corn whether
it be grits or cornmeal for the Southern table was white corn. The line of
demarcation was the Mason-Dixon line—if you lived north of the line most
probably your family preferred yellow corn—if you lived south of the line your
preference was white corn. Because white corn is not grown as much as yellow,
sometimes the grain supply is undependable. Several years ago, I was out of
white corn and a Southern lady visiting the mill wanted a sack of white
cornmeal. Even though, she knew all about the difference in taste and texture of
water-powered stone buhr ground cornmeal, I couldn’t sell her a sack of yellow.
She informed me quite emphatically, “Honey, we feed yellow corn to the hogs and
eat white corn!” Now, that’s how adamant she was about her cornmeals. I’m sure
that neither did she ever put sugar in her cornbread, whereas in northern
regions of the U.S., sometimes the cornbread tastes more like cake than bread.
So, I began to grind yellow corn for grits instead of white, therefore, aptly
named “Yankee”

TRUE GRITS BREAD
The double corn combination of yellow
grits and yellow cornmeal make a beautiful loaf with color
and texture.
John Wayne would love this bread--a welcome
respite from the 175 corn dodgers that Chen Lee packed in his saddle bags in the
wonderful movie, "True Grit". So "fill your hands" with True Grits bread!!
1 cp water
½ cp War Eagle Yankee Corn Grits
In a 2 cup glass measuring cup, bring 1 cp water to a boil in the microwave.
Pour in grits; let set 15 minutes, stirring with a fork after 5 minutes.
1 cp War Eagle White Wheat Whole Grain Flour
2 ¼ cps War Eagle All-Purpose Unbleached Flour
1 pkg (2 ½ tsp.) dry active yeast
2 Tbs dried milk
¼ cp War Eagle Yellow Cornmeal
1 ¼ tsp salt
2 Tbs War Eagle Honey
½ cp lukewarm water
Bread Machine Instructions: Place all
ingredients in the bake pan. Set on the dough or manual cycle of your bread
machine; press start. When finished, remove dough. Spray a 9 X 5-inch loaf pan
with non-stick cooking spray. Shape into a loaf; place in pan. Bake in a
preheated 375 degree oven for 35 – 40 minutes.
Conventional Instructions: In a large mixing
bowl, dissolve yeast in lukewarm water. Stir in honey, cooked grits, dried
milk, salt, cornmeal, and white wheat flour, beating well. Add all-purpose
flour cup by cup; turn out on floured board, kneading until smooth and elastic,
about 5 minutes.
Place in a lightly oiled large bowl. Cover with plastic
wrap and a clean cloth. Set in a warm place for about 1 ½ hours until double.
Spray a 9 X 5-inch loaf pan with non-stick cooking spray. Shape into a loaf;
place in pan. Bake in a preheated 375 degree oven for 35 – 40 minutes.

POLENTA
Our grits or cornmeal are great for polenta!
If you like polenta real crunchy, use the grits if not use the cornmeal. At the
Mill, we think of polenta as Ozark Mush. Both recipes are made the same. The
formed mush base then can be sliced and fried, sautéed, baked, or grilled.
Southern mush is traditionally fried in butter until crispy with brown edges
then served with syrup. Polenta has any number of different embellishments like
Italian tomato based sauces, Southwestern salsas, olive oil pestos, black bean
and corn mixtures, tapenades, olivnades, and hundreds of others. You can form
them into timbales, triangles, or cut them round.
