The month of February is a time for many things – Ground
Hog Day, the Super Bowl, snowy mornings and Valentine’s
Day. More importantly it is Healthy Heart Month, a time to take a closer look at our lifestyle
and find ways to improve our cardiovascular health.
More than 64 million Americans suffer from one or more
forms of cardiovascular disease, including high
blood pressure, coronary heart disease, congestive
heart failure, stroke, and congenital heart defects.
Many of the risk factors that can lead
to heart disease, such as high blood pressure,
high cholesterol, and diabetes, can be controlled.
Research has shown that those people who
include healthy food choice, along with a healthy
lifestyle, can significantly reduce their risk
of heart disease.

Our muffin recipe uses three different whole grains
and raspberries (a high fiber fruit) to give your
day a healthy start. So bake up a batch today to share with your
sweetheart!
Sweet Heart Muffins
Ingredients
1/2 cp War Eagle Thick Rolled
Oats
1 cp low-fat or soy milk
½ cp War Eagle Unbleached
All-Purpose Flour
¼ cp War Eagle White Wholegrain
Wheat Flour
½ cp War Eagle Yellow Cornmeal
1/4 cp War Eagle Oat Bran
1 Tbs baking powder
¼ tsp salt
½ cp honey or sorghum
3 ½ Tbs canola oil
2 tsp lemon zest
1 egg, lightly beaten
2/3 cp raspberries
Directions
Preheat oven to 400°.
Line a 12-cp muffin tin with paper liners,
or spray with non stick spray.
Combine oats & milk in microwave safe bowl and
heat for 3 minutes.
Set aside & let cool.
In large bowl, add dry ingredients and blend together.
Add the honey, oil, zest, oat mixture and
egg. Stir
until just moistened; batter will be lumpy.
Gently fold in the raspberries.
Spoon batter into muffin cups, filling each cup 2/3
full. Bake
until the tops are golden brown, about 16 – 18
minutes. Transfer
the muffins to a wire rack and let cool completely.
