Cooking is a great part of summertime fun whether indoors or out. Our new whole grain Pecan Cinnamon Whole Grain Pancake Mix can make happy experiences whether the cakes are cooked inside on the griddle or outside in a skillet over the old Coleman stove. All ages are going to love this mix, it's just stir em up, stir em up, throw them in the pan! Made from certified organic white wheat flour, this mix is chocked full of Arkansas grown pecan pieces and dusted with the sweet taste and aroma of our Korintje gourmet cinnamon. This is a buttermilk based mix with a light sweetening of raw sugar. The cakes are light with substance for holding qualities whether swimming or hiking

To make the pancakes, just add water and vegetable oil. For waffles, add a fresh egg, oil, and water. Adding local fresh fruit to pancakes creates a new dimension. My favorite fruit to add to pancakes has always been blueberries, but the northwest Arkansas' blueberries and our native wild huckleberries were destroyed by the late frost this past spring. So, now, I am adding blackberries, raspberries, and bananas.

Peaches are another wonderful addition which will ripen later, assuming we will have a crop. In a separate bowl, sprinkle a little sugar on the fruit, then gently fold into the batter after it is mixed. With waffles, I prefer to sprinkle the fruit on top of the cooked waffle or prepare a fruit sauce by lightly cooking the fruit with sugar and drizzling on top.
