The War Eagle Biscuit Mix is so very versatile-- great for pancakes, waffles, quiche, cinnamon raisin biscuits, Red Lobster Style Biscuits, pot pie, apple biscuit cake—34 of these Biscuit Mix recipes are in my pantry cookbook, "Pass the Biscuits". The trick to light biscuits is NOT to work the dough, gently stir in water and turn out on floured board, folding a couple of times. Cut with a floured biscuit cutter, with a straight down, straight up movement. Bake in a hot, 450 degree oven. APRICOT – PECAN BISCUITS

Lovely, sweet and fresh taste!

2 cps War Eagle Biscuit Mix
¼ cp sugar
4 Tbs butter
1/3 cp dried apricots, chopped
¼ cp pecans, chopped
¾ cp water
Topping – 1 Tbs melted butter, 2 tsp sugar
Preheat oven to 400 degrees. In small size bowl, mix together biscuit mix and ¼ cp sugar. Cut in butter. Mix in apricots and pecans. Stir in water, mixing just until moistened.
Turn out on lightly floured board. Fold over twice. Pat out to ½-inch thickness. Cut with a floured 2 1/2-inch biscuit cutter. Place 2 inches apart on baking sheet lightly coated with cooking spray. Brush biscuits with 1 Tbs melted butter; sprinkle with 2 tsp sugar. Bake for 15 – 20 minutes or until lightly golden. Makes 10.
