We all know that it is the start of the holiday season, the first frost, and for many of us the first opportunity of the year for family gatherings. Unfortunately family gatherings can also lead to another beginning – the start of the typical 7lb weight gain the average American puts on during the holiday season. But, cooking the whole grain way can help you keep that weight off. Just substituting whole grain flour for all or part of all-purpose flour not only cuts calories, but adds vital nutrition to our diet. That extra energy will be appreciated during another beginning – the start of the holiday shopping season!

Triple Grain Pancakes

These low-fat pancakes combine three different types of grain for a healthy start to your shopping day. The sour cream makes them tender and tasty without adding any extra fat.

Ingredients

¾ cp War Eagle Whole Wheat Flour

½ cp War Eagle All-Purpose Flour

¼ cp War Eagle Cornmeal ( Yellow, White or Blue)

¼ cp War Eagle Thick Rolled Oats

½ cp brown sugar, firmly packed

1 tsp baking soda

¼ tsp salt

2 large egg whites

1 cp buttermilk

1 cp fat-free sour cream

Combine dry ingredients in large bowl; set aside. In medium bowl beat egg whites into soft peaks then gently stir in buttermilk and sour cream. For each pancake pour ¼ cup of batter onto hot griddle (375°). Makes 14 – 16 pancakes.

Every family feast has to have at least one tasty treat! The name may not sound appealing, but it the W holegrain flour, A pricots and D ates that give these cookies the fiber and flavor you'll love. They would even be a great afternoon snack at the mall instead of some of the other offerings that provide only empty calories!

1 cp War Eagle White Wheat Flour

¼ cp War Eagle All-Purpose Flour

¾ cp War Eagle Thick Rolled Oats

1 tsp cinnamon

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cp brown sugar, firmly packed

1 egg

½ cp unsweetened applesauce

2 Tbs canola oil

1 tsp vanilla extract

½ cp chopped dried apricots

¼ cp chopped dates

Preheat oven to 350°. Line 2 cookie sheets with parchment paper.

Stir together dry ingredients in medium bowl. In large bowl combine brown sugar & egg with wooden spoon; add oil, applesauce and vanilla. Gradually add flower mixture until blended. Stir in dried fruit.

Drop dough by tablespoonful on prepared cookie sheets. Bake for 12-14 minutes or until edges are slightly browned. Make 18 cookies.
