The short, cold days of winter seem to make food an even greater comfort. But all is not lost! You can get back on track by simply adding whole grains, rich in fiber and nutrition, to your diet. A pot of beans simmering on the stove, the smell of bread baking in the oven – this is true aroma therapy that heals the body and soul! Give our recipes a try and start the New Year right.

Quinoa Nut Cakes
Quinoa ( pronounced keen-wa) is an ancient grain that is a “complete protein” containing all the essential amino acid required by humans. That protein and the added fiber of whole grain flour will help keep you full longer.
Ingredients
1 cp cooked War Eagle Mill Quinoa
2 cps buttermilk
3 Tbs melted butter
½ tsp salt
1 tsp vanilla extract
1 Tbs sugar or honey
½ cp finely chopped nuts
4 eggs, separated, at room temperature
1/3 cp White Whole Wheat Flour
Stir together quinoa, buttermilk, butter, salt, vanilla, sugar and nuts in a large bowl. With electric mix beat egg yolks at medium speed for about 4 minutes, or until lemon colored and thickened. Blend in the flour, then stir into quinoa mixture. In a clean bowl, beat egg whites into stiff peaks, but not dry. Gently fold egg whites into batter until blended. Heat griddle or skillet over medium heat; drop 2 – 3 tablespoons of batter for each pancake. Cook for about 2 minutes; flip, cook another minute. Serve hot; makes 18 – 24 small pancakes.
Overnight “Scentsation”
This is a easy, over night, breakfast recipe. The aroma of fruit and spice will make it easier to jump out of bed in the morning. The slow cooker eliminates the need for constant stirring and makes for a creamier consistency. It's important to use Steel Cut, rather than Rolled Oats in this recipe.
8 cps water
2 cps War Eagle Steel Cut Oats
1/3 cp dried cranberries
1/3 cp dried apricots, chopped
1 tsp cinnamon, or other spice of your choice
¼ tsp salt
Combine water, oats, dried fruit, cinnamon and salt in a 5 or 6 quart slow cooker. Turn heat to low. Put the lid on and cook until oats are tender, usually 7 – 8 hours. Makes 8 – 1 cp servings.
New Year Stir Fry
Out with the old (Christmas turkey left-overs) and in with the new (whole grain barley instead of white rice). This is an easy and quick meal full of fiber and flavor that will start your New Year off right!
2 cps cooked War Eagle Pearled Barley
1 ½ cps cooked and cubed turkey
½ cp red bell pepper, finely chopped
½ cp slice green onion
3 eggs
1 tsp garlic salt
½ tsp ground ginger
1 Tbs low sodium soy sauce
¼ cp slivered almonds, toasted
Heat 2 Tbs oil in large skillet over medium high heat. Add barley, turkey, bell pepper, and onion. Stir-fry 4 -5 minutes. In small bowl, beat together eggs, garlic salt and ginger. Add to barley mixture; stir frying until egg mixture is cooked. Sprinkle on soy sauce and almonds. Stir to combine. Makes 8 servings. To cook barley bring 3 cps of water to boil in medium saucepan. Add 1 cp barley and return to boil. Reduce heat to low, cover & cook 45 minutes or until tender and water is absorbed. Makes about 3 to 3 ½ cps. Cooked barley can be refrigerated of frozen for up to a week in an airtight container. Bring to room temperature before using.
