Cranberry Bread

This is a tart treat that would be perfect for a festive holiday breakfast or brunch! We use wholegrain flour and just a little oil, making it a much healthier version of most quick breads. The almonds and cranberries also have great nutritional value.

Ingredients

2 cps War Eagle Whole Wheat Flour

1 tsp salt

½ tsp baking soda

1 ½ tsp baking powder

½ cp chopped almonds

1 tsp grated orange peel

1 cp fresh cranberries, halved

1 ½ cps orange juice

¾ cp brown sugar, packed

1 Tbs oil

1 egg, beaten

Preheat oven to 325°. In small bowl, soak cranberries in sugar and orange juice; let sit for 5 minutes. Meanwhile in large bowl stir together flour, salt, baking soda, baking powder, orange peel and almonds. Stir egg & oil into cranberry mixture. Stir that into dry ingredients until just moistened. Fold into grease loaf pan and bake for 40 – 50 minutes. Remove from pan; let cool on rack. Makes 1 loaf. Optional – glaze with mixture of orange juice and powdered sugar.

Santa Snacks

We don't want Santa to loose his “bowl full of jelly” look, but we do want him to eat healthy! These oatmeal cookies made with whole grain flour and oats will still satisfy his sweet tooth and yours too!

1 ½ cp War Eagle Thick Rolled Oats

1 cp War White Wholegrain Wheat Flour

1 tsp cinnamon

½ tsp baking powder

½ tsp baking soda

½ tsp salt

2/3 cp brown sugar, firmly packed

6 Tbs butter

1 egg

2 Tbs water

1 tsp vanilla extract

½ cp raisins

½ cp chopped nuts (optional)

Preheat oven to 375°. Lightly grease 2 cookie sheets, or line with parchment paper.

Stir together first 6 ingredients in medium bowl. In large bowl cream sugar & butter. Beat in egg, water and vanilla. Gradually add flower mixture until blended. Stir in raisins & nuts.

Drop dough by tablespoonful on prepared cookie sheets. Bake for 8.-10 minutes or until edges are slightly browned. Make 24 cookies. Place 12 on a plate for Santa & his reindeer. Eat the rest
