As we continue to clean up from the disastrous ice storm that hit us in early February, we are also finding hints of spring. Daffodils are popping up under the brush piles and even the damaged trees are beginning to form tiny buds. The lesson here is one of hope and renewal. There is light at the end of the tunnel – even a tunnel of downed trees blocking the road! Of course, the light did not come on for 11 days, but it did come on!

So many of us have a hard time maintaining the diet & exercise program that we start at the beginning of the year. But, we can't give up now! As days get longer, our clothes don't – shorts, swimsuits, etc will be forefront in our closet soon. A diet of whole grains, in addition to lowering your risk or heart disease, has also been shown to be good for our waistline. A new study published by the American Journal of Clinical Nutrition shows that people following a weight loss program incorporating whole grain flours & cereals lost more body fat from the abdominal area that those who ate refined foods like white flour and rice.

Whole Wheat Irish Soda Bread

This quick bread is a very traditional part of any St Patrick's Day Celebration. The addition of whole grain flour to the dough adds flavor and fiber.

Ingredients

Directions

Combine dry ingredients & mix thoroughly to distribute soda and baking powder. Add enough buttermilk to form a soft dough. Knead on a lightly floured board for 2 – 3 minutes until smooth.

Form dough into an 8” round loaf and place on greased or parchment lined cookie sheet. Using a sharp, floured knife, cut a cross on the top of the loaf. Bake in a preheated 375° oven for 35-40 minutes or until brown (should sound hollow when tapped). Let cool completely before slicing.

Sunshine Sausage Cornbread

Sausage and eggs in cornbread – now that's living! The cooked egg on top looks like the golden sun on the first day of Spring! This is just one of the recipes in our "Gilded Cornbread" cookbook.

Ingredients

Directions

Preheat oven to 425°. Cook sausage in medium skillet until brown and crumbly. Add onions; cook until transparent, drain. In medium bowl stir together mix, sage and sugar. Make a well in the mixture, stir in beaten eggs and milk. Coat four 4-inch custard dishes with cooking spray. Divide sausage mixture between dishes. Pour batter evenly over each dish. Break one egg in middle of each dish. Bake for about 25 minutes or until golden brown and egg is set. Makes 4 servings.
