For the past year now so many of you have allowed us to come into your home and share our products, recipes and thoughts with you, via our newsletter. This month marks the one year anniversary of “Grains of Wisdom” as well as Ground Hog Day, the Super Bowl, President's Day and Valentine's Day. More importantly it is Healthy Heart Month once again, a time to take a closer look at our lifestyle and find ways to improve our cardiovascular health.
More than 64 million Americans suffer from one or more forms of cardiovascular disease, including high blood pressure, coronary heart disease, congestive heart failure, stroke, and congenital heart defects. Many of the risk factors that can lead to heart disease, such as high blood pressure, high cholesterol, and diabetes, can be controlled. Research has shown that those people who include healthy food choices such as wholegrains, along with a healthy lifestyle, can significantly reduce their risk of heart disease.

Sweet Heart Cake
This cake offers all the rich flavor of chocolate, but with the added nutrition of two wholegrain flours. The perfect Valentine treat for your sweetheart!
Ingredients
3/4 cp War Eagle White Wheat Wholegrain Flour
½ cp War Eagle Oat Flour
1 tsp baking soda
¼ tsp salt
2 oz unsweetened chocolate
¼ cp butter, softened at room temperature
1 ¼ cp brown sugar, lightly packed
2 eggs
1 ½ tsp vanilla
½ cp sour cream
½ cp boiling water
Directions
Preheat oven to 375 ° . Grease and flour a 9” cake pan.
Sift together flours, baking soda and salt; set aside. Melt chocolate and allow to cool slighty, but not harden. Beat butter and sugar for two minutes; add eggs and beat for an additional two minutes. Beat in vanilla and cooled chocolate. Gradually stir in flour mixture and sour cream, alternating between the two. Stir in the boiling water. Pour in prepared pan.
Bake for 20 – 23 minutes. Do not over bake or cake will be too dry. Allow to cake to cool in pan on wire rack for 10 minutes. Serve plain or top with fresh raspberries and whipped cream!
Spicy Quinoa
This side dish is a great alternative to Spanish Rice. Quinoa is higher in protein and fiber than white rice, and cooks just as quickly. You could also use this as a filling for stuffed peppers or burritos. Adjust the seasonings to fit your tastes.
Ingredients
2 Tbs vegetable oil
1 cp War Eagle Mil Quinoa , uncooked
1 medium onion, chopped
3 cloves garlic, minced
1 green pepper, chopped
1 can tomato sauce, 8 oz ( you may substitute canned tomatoes for chunkier version)
2 ½ cps water
1 tsp chili powder
¼ tsp garlic powder
¼ tsp ground cumin
Directions
Heat oil in large saucepan over medium high heat. Stir in quinoa, onion, garlic, and green pepper. Cook & stir 5 to 10 minutes until onion is tender and quinoa is lightly toasted. Stir in tomato sauce and water and seasonings. Bring to a boil, then reduce to simmer. Cover and cook 30 minutes or until quinoa is tender and liquid is absorbed, stirring occasionally.
