War Eagle Bridge Restoration!

Come check out the newest photos on our new bridge restoration PHOTO GALLERY! The new decking is down and the restoration crew is on schedule. The bridge is closed for restoration through late September. If you are coming from the south click here for detour routes. Those of you arriving from the north via Highway 12 (Benton Co., Eureka Springs) will not be affected by the bridge closure. Most people think that the only holiday in September is Labor Day.  But, if you were to do an internet search you would also find that it is National Biscuit Month, Better Breakfast Month, and National Organic Harvest Month.  In other words, it is “National War Eagle Mill Month” because we are your source for all those things! In honor of biscuits and the local apple harvest, we feature a cake using our biscuit mix and the sweet, high fiber fruit. We always celebrate breakfast at War Eagle Mill. Be sure and try this month’s recipe for multigrain pancakes.

Apple Biscuit Cake

A quick & easy recipe featured in our “Pass the Biscuits” cookbook


You Will Need:
  1. Preheat oven to 350 degrees F.
  2. In a medium size bowl, combine War Eagle Mill Biscuit Mix, sugar and milk.
  3. Pour into a 9 x 11-inch baking pan coated with cooking spray.
  4. Place apple slices on top of batter and sprinkle with lemon juice.
  5. In a small bowl, combine brown sugar, cinnamon and pecans.
  6. Sprinkle mixture over apples and pour boiling water over all. Do not stir.
  7. Bake for 45 to 50 minutes or until golden brown and apples are done.
  8. Serve warm as a breakfast sweet.

Multigrain Pancakes
Multigrain Pancakes

This is a low fat pancake using four kinds of grains – definitely a Better Breakfast!


Here’s what you need:
  1. In a mixing bowl, combine flours, cornmeal, oats, brown sugar, baking soda, and salt. Set bowl aside.
  2. In a large bowl, beat egg whites until soft peaks form.
  3. Gently fold buttermilk and sour cream into egg whites.
  4. Add flour mixture and stir just until batter is moistened.
  5. Heat greased griddle or skillet over medium heat.
  6. For each pancake, pour 1/4 cup batter onto hot griddle.
  7. Cook pancakes until puffed, bubbly and dry around edges.
  8. Flip pancakes and cook the other side until golden brown.
  9. Cooks Note: You can substitute the buttermilk by placing 1 tablespoon white vinegar in a glass measure and adding enough milk to equal 1 cup. Let stand for 5 minutes prior to using.

Makes about 16, 4-inch pancakes.
