Our theme this year is “That’s Surreal.” This cake contest is open to anyone over 18 years old. The competition will be limited to no more than 10 contestants. WHAT IS IT?

Spelt has been grown in Europe for over 300 years, but only in North America for just over 100 years. It is similar to wheat in appearance. However, spelt has a tougher husk than wheat, which may help protect the nutrients in spelt. The flour has a somewhat nuttier and slightly sweeter flavor than whole wheat flour. Spelt contains more protein than wheat, and the protein in spelt is easier to digest. Spelt has gluten, just like wheat, so it is not suitable for a gluten-free diet.

HOW WE SERVE IT:

You can substitute spelt flour for any recipe that calls for whole wheat flour.  It is good for quick breads, muffins, cookies and cakes of course!

We love this time of year at War Eagle Mill. June is the official start of summer, and more fresh fruit and vegetables will begin appearing at our local farmers’ market. We feature two cake recipes this month that make great use of the berries coming into season in your area. Our friends at the Bentonville Farmers’ Market say the blueberries will arrive the beginning of June.

Speaking of cakes, War Eagle Mill is joining Downtown Bentonville , Inc. in sponsoring the first Art of Cakes competition at the Bentonville ArtsFest on June 12. Details in the side column.

Last but not least, don’t forget to celebrate dad this month. Our Super Berry Coffee Cake is a great way to start his day. If you’re in the area, you can enjoy a hike around the corner from the Mill at Hobbs State Park or take him fishing on War Eagle Creek. Our restaurant will have a special menu for dad, and of course there will be plenty of our famous pecan cobbler.

Super Berry Coffee Cake
with Granola
Coffee Cake with Berries and Granola
Our Supernatural Granola makes a great topping for this coffee cake. The wholegrain Spelt Flour, along with fresh berries from your farmers’ market, adds flavor and fiber.

You Will Need:
  1. Preheat oven to 350 degrees F. Spray an 8- or 9-inch round cake pan with cooking spray.
  2. In large bowl mix sugar, buttermilk, oil, vanilla and egg until smooth.
  3. Whisk together the flour, baking soda, cinnamon and salt in a small bowl.
  4. Stir into batter until just moistened. Fold in 1/2 cup of the berries and spoon into pan.
  5. Top with remaining berries and granola. (Note: any large pieces of nuts in granola can be coarsely chopped.)
  6. Bake for 25 to 30 minutes or until golden brown and top springs back when touched in center.
  7. Remove from oven and cool in pan on rack for 10 minutes. Best served warm!
Makes one 9-inch cake.

Whole Grain Raspberry and Chocolate Cake
Raspberry Chocolate Cake
This cake tastes rich and decadent but is a healthy combination of whole grain flours and the summer’s fresh berry harvest!

Here’s what you need:
  1. Preheat oven to 350 degrees F. Coat 9-inch square pan with cooking spray.
  2. In large bowl whisk together the flours, 1/2 cup of the sugar, 1/4 cup of the cocoa, baking powder, baking soda, and salt.
  3. In small bowl mix 1 cup of the yogurt, oil and vanilla.
  4. Using an electric mixer, beat egg whites in a medium bowl until soft peaks form.
  5. Gradually beat in remaining sugar until stiff, glossy peaks form.
  6. Stir yogurt mixture into flour mixture until just moistened.
  7. Fold in egg whites until no streaks remain.
  8. Pour into prepared pan and sprinkle 1 cup of berries on top of batter.
  9. Bake for 35 to 40 minutes or until a wooden pick inserted in the center comes out clean.
  10. Remove from oven and cool on rack for 10 minutes before removing from pan; then let cool completely before topping.

Topping

In a small bowl mix the preserves and the remaining 1/2 cup of yogurt. In another small bowl mix the honey, water, and remaining 1/4 cup of cocoa. Cut the cake into twelve squares and top with yogurt and chocolate sauce. Garnish with remaining 1/4 cup raspberries.

Makes one 9 inch cake, yielding 12 servings.
