The Twelve Days of Christmas just got sweeter -- and a little bit healthier -- with the War Eagle Mill Special Holiday Sale. This is a special "at the mill" Holiday sale for unique gifts, Bean Palace restaurant selections and War Eagle Mill products on all three floors -- December 11, 12 and 13! Even if you can't join us, we will still have our elves busy in our shipping department preparing gift boxes and baskets and making sure we have everything you need to make your holiday a wholesome and healthy one. We have a great selection of items to fit your taste as well as your budget. We also want to share some of our favorite holiday recipes so you can give you and your family the gift of health this holiday season. The fact that they are delicious won’t hurt either! Marshmallows may be more traditional, but our recipe gives sweet potatoes a savory spin with garlic, rosemary,Swiss cheese and wheat berries adding a sweet, nutty taste. You Will Need: - 3 cups water
- 1 cup War Eagle Wheat Berries
- 1/2 tsp salt, divided
- 2 lb sweet potatoes, peeled & sliced into 1/8” slices
- 2 garlic cloves, minced
- 2 Tbs fresh thyme, chopped fine
- 1 Tbs fresh rosemary, chopped fine
- 2 cups grated Swiss cheese, divided
- 1/2 cup chicken broth
Add water & wheat berries to medium saucepan and bring to boil. Reduce heat, cover, and simmer for 1 hour, or until water is absorbed. Stir in ¼ tsp of the salt. Preheat oven to 350° Coat a 13 x 9 –inch pan with cooking spray and layer half the potato slices in bottom of pan. Sprinkle with half of the garlic, thyme, rosemary and 1/8 tsp of salt. Spread on half the wheat berries and 2/3 cp of the cheese. Repeat, saving 2/3 cp of Swiss cheese for topping. Pour the broth over the top and cover with foil. Bake until potatoes are tender, about 45 minutes, then cover with the 2/3 cp of reserved cheese. Bake for 5 more minutes . Serve warm. Makes 8 servings. View more holiday recipes in our online recipe collection! click here. Chunky Chip Cookies  We only want 2 things to be chunky this time of year, our cookies and Santa Claus! The whole grain flour, oats and canola oil in place of butter, make for delicious cookies, but without making us chunky! Here’s what you need: - 1 1/2 cups War Eagle White Wheat Flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/2 cup canola oil
- 2/3 cup granulated sugar
- 2/3 cup brown sugar
- 2 egg whites
- 1 1/4 tsp vanilla extract
- 1/2 cup War Eagle Thick Rolled Oats
- 3/4 cup semisweet chocolate chips or chunks
Preheat oven to 375°. Stir together flour, soda, cinnamon & salt in medium bowl. Combine oil and sugars in large bowl. Whisk in egg whites and vanilla until smooth. Mix in dry ingredients until just blended. Fold in oats and chocolate; cover and chill dough for 30 minutes. Line 2 cookie sheets with parchment paper. Shape dough into 16 balls, about ¼ cp each. Place 8 balls on each sheet and press into a 3-inch circle. Bake for 7 to 10 minutes, turning sheets halfway through to ensure even browning (do not over bake). Let cool for 3 minutes before transferring to a rack. Makes 16 cookies Put 4 on a plate for Santa, and eat the rest! It is COOKIE season! Are you ready for even more tasty cookie ideas?
