Whole Wheat Irish Soda Bread

This quick bread is a very traditional part of any St Patrick's Day Celebration. The addition of whole grain flour to the dough adds flavor and fiber.

ingredients

  • 3 cups War Eagle Wholegrain White Wheat Flour
  • 1 cup War Eagle Unbleached All-Purpose Flour
  • 1 Tbs salt
  • 1 tsp baking soda
  • 3/4 tsp non-aluminum baking powder
  • 1 1/2 to 2 cps buttermilk

instructions

  1. Combine dry ingredients & mix thoroughly to distribute soda and baking powder.
  2. Add enough buttermilk to form a soft dough.
  3. Knead on a lightly floured board for 2 - 3 minutes until smooth.
  4. Form dough into an 8"round loaf and place on greased or parchment lined cookie sheet.
  5. Using a sharp, floured knife, cut a cross on the top of the loaf.
  6. Bake in a preheated 375 F oven for 35-40 minutes or until brown (should sound hollow when tapped).
  7. Let cool completely before slicing.
