I start every morning with a hearty whole grain breakfast. Sometimes in the form of pancakes or peanut butter toast but my specialty is Milletmeal. Yep, you read it right. It’s not Oatmeal, it’s Milletmeal! Never heard of it? Well, let Millie tell you more. Instead of cooking up oats, I cook up millet berries and swirl in cinnamon and honey and top it with tasty fruit like blueberries and Granny Smith apples. Delish! Give it a go!
Cinnamon Honey Milletmeal
- 1 cup organic 1% low fat milk (other options: almond, rice or other non-dairy milk)
- 1 cup water
- 1 cup WEM Organic Millet Berries
- 2 cups fresh blueberries
- 1 Granny Smith apple, chopped up
- Other favorite fruit
- 1/2 tsp ground cinnamon
- 1/3 cup pecans, chopped
- 4 tsp raw honey
Combine milk, water and millet berries in a medium saucepan. Add a pinch of cinnamon to the saucepan and bring to a boil over high heat.
Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Transfer to bowls.
Stir in cinnamon, blueberries, apples, and other fruit.
Top with pecans and drizzle honey over each serving. Dig in!
